Baked Harissa Sweet Potato Planks with a Fried Egg and Avocado 

                    Breakfast: Either a welcome feast or a last thought in my house.

         This little ditty came about when I was hungry for something spicy and had to use up a lone sweet potato left for nothingness.
                     This hit the spot and let’s be honest, anytime you top something with a fried egg it’s BOUND to be amazing.


Baked Harissa Sweet Potato Planks with a Fried Egg and Avocado 

Ingredients: 

3 tbsp evoo, divided 

1 sweet potato, cut into planks 

3 organic eggs 

2 tbsp Harissa Paste 

1 avocado 

1 tbsp garlic powder 

3 oz feta cheese 

half a Jalapeño, sliced 

2 tbsp green onion, chopped 

Instructions: 

1. Preheat oven to 400 degrees. Slice sweet potato into 3 or 4 planks.

2. Mix together Harissa paste,  garlic powder, and one tbsp oil. Coat mixture all over planks and put on sheet pan.  When oven is ready put the sweet potato in for about 20 mins or until soft in middle.

3. While potatoes are cooking heat a sauté pan over medium heat. Add oil and then carefully crack your eggs into the pan. Cook over medium high heat for a couple mins until edges are crispy and yolk is almost set.

4. Once sweet potato is done remove from oven and right on the sheet pan, smash your avocado across each slice. Add the fried egg, sliced jalapeño, chopped green onion and finally sprinkle the feta cheese. Nom!
