Vegetarian Thai-Style Walnut Lettuce Wraps with Sriracha 

I’m always trying to think of new ways to reinvent some of my favorite recipes.

And Lettuce Wraps are definitely one of those things.

These are vegetarian lettuce wraps but you would never know! These wraps have a “meat mixture” that is a blend of walnuts, carrots, and mushrooms.

It’s incredible how much texture and flavor there is with NO meat in sight!



Vegetarian Thai-Style Walnut Lettuce Wraps with Sriracha 

Ingredients: 
Filling: 

8 oz crimini mushrooms, diced

1 cup raw walnuts, briefly pulsed in a food processor

1 cup shredded carrot, chopped

1/2 cup water chestnuts, chopped

2 clove garlic, finely chopped

2 tbsp green onion, chopped

1/4 tsp red pepper flakes

Sauce: 

3 tbsp hoisin sauce

3 tbsp soy sauce

1 large clove garlic, grated

2 tbsp rice vinegar

2 tbsp green onion, chopped

2 tbsp fresh ginger, grated

1 tsp sesame oil

2 tbsp avocado oil or grapeseed oil

Wraps: 

8 leaves Butter Lettuce or Romaine

Sriracha to taste

More Shredded Carrot (optional)

Cilantro (optional)

Instructions: 

1. Add one tablespoon to a medium size sauté pan and set to medium high heat. Start by chopping the first 6 ingredients and put into the preheated sauté pan on med high heat. Add red pepper flakes to taste.

2. Mix together all the ingredients for the sauce. Wisk until combined.

3. Once vegetables have sautéed for about 4 or 5 mins, add the sauce mixture. Sautee for another minute or 2.

4. Remove from heat once everything is mixed and looks caramelized.

5. Take a lettuce cup and fill with walnut mixture and add Sriracha. Cilantro and more carrots are optional but very delicious. Nom!
