Grilled Salmon, Veggie, & Halloumi Skewers w/ Spicy Red Chermoula

Summer time and the grillin’s easy… Or so they say.

Whenever I can make something completely on the grill and keep the heat out of the house, I am in heaven!

And these kabobs are to die for!

So spicy, delicious, and mindblowingly fantastic.

They are seriously something that I can’t wait to make again.

I think I’ll add this recipe to the million + 1 Salmon recipes I have. 🙈

Grilled Salmon, Veggie, & Halloumi Skewers w/ Spicy Chermoula

Ingredients:

1.5 lbs Salmon, cut in inch size pieces

10 mini sweet peppers, cut in inch size pieces

10 small new potatoes, Boiled until slightly tender

10-15 cherry tomatoes

8 oz Halloumi cheese, cut into inch size pieces

Fresh ground salt & pepper, to taste

10 wooden skewers, soaked in water for a half hour (it helps to not burn the wood)

Chermoula

1/2 cup cilantro, chopped

3 cloves garlic, chopped

1 lemon, juice and zest

1/4 cup sambal chili paste

Instructions:

1. Start by making the Spicy Chermoula. Put all ingredients in a food processor and blend for a few minutes. Making sure there isn’t any big chunks.

2. Next assemble the skewers. Alternating between each veggie, cheese and salmon until the skewer is packed full.

3. Grill on high heat for 10- 15 mins depending on how crowded the grill is.

4. Once skewers are off the grill, slather on the Chermoula and eat till your hearts content. 😂
