Brussels Sprouts, Garlic, + Three Cheese Pizza’s w/ Cherry Tomatoes
1 puff pasty, rolled slightly bigger and cut into 9 pieces
1 cup marinara sauce
5-6 Brussels Sprouts, shredded thinly
2 garlic cloves, chopped
9 mini mozzarella balls
1/2 cup grated parmsan
1/2 cup feta cheese
1/2 cup cherry tomatoes, halved
1 tbsp EVOO
salt and pepper, to taste
2 tbsp parsley, chopped
1. Preheat oven to 425F. Lay a sheet of parchment paper on a sheet pan. Cut puff pasty into 9 equal squares.
2. Put Brussels sprouts, cherry tomatoes, garlic, EVOO, salt and pepper and the Parmesan in a small bowl. Toss to combine.
3. Top each square of puff pastry with a tablespoon of marinara, a mozzarella ball, alittle feta and some of the Brussels sprouts. Put each tart on the parchment lined sheet pan.
4. Put sheet pan in the oven and bake for 15-20 mins. Once golden brown remove from oven and sprinkle on parsley.
