Farmers Market Beef & Veggie Soup 

Umm I LOVE soup so much. 💕

It’s a year round staple at my house & I really don’t stop making it at any point, even if it’s 100F outside! 😂

I love the ease of soup. You can have a full meal ready in as little as 20 mins or so.

This soup is extra yummy because it uses FARMERS MARKET veggies! Most of the veggies I used were from the farmers market but you can use whatever you’d like.

Nothing beats fresh veggies grown by yourself or someone who loves to grow things.


Farmers Market Beef & Veggie Soup 

Ingredients: 

1 lb organic ground beef, browned & then rinsed (I got some great beef from my farmers market.)

1 tbsp EVOO

2-3 cloves garlic, chopped

1 large onion, chopped

3 large carrots, chopped

1/2 cup fresh peas

1/2 cup fresh green beans

1 large organic tomato, chopped

1-2 large potatoes, peeled & chopped

1-2 ears fresh corn, kernals removed

1 can diced tomatoes

32oz water

1-2 tbsp organic beef base (I used ‘Better Than Bouillon’ brand)

1 tbsp fresh thyme, chopped

1 tbsp fresh oregano, chopped

2 bay leaves

Salt & Pepper, to taste

1/2-3/4 cup pasta (I used rotini that I broke into smaller pieces)

Instructions: 

1. Start by browning the beef, over medium high heat, in a large soup pot. Remove the beef when just cooked and put in a strainer to wash off the oil. Run under water until water runs clear.

2. Remove fat from pan and pour in EVOO. Add in the onion and sauté for 3-4 mins until soft and slightly see through. Add garlic and sauté for another minute. Spoon in the beef base and mix around for a minute to get the flavors woken up. Then add the water, stirring to combine.

3. Add beef back into the pot and the rest of the ingredients and stir. Bring to a boil and then lower the temperature to medium heat and simmer for 20-30 mins.
